5 New Bakery-Cafés Redefining Prague’s Pastry Scene

Forget the traditional divide between bakeries, cafés, and restaurants. Prague’s newest openings are blurring the lines and transforming the city’s pastry scene with inventive, cross-cultural flavors and an unpretentious charm. From Vietnamese-French fusion to allergy-friendly indulgence, a new generation of bakers and chefs is rethinking Czech traditions and redefining comfort food.

Paté – French Technique Meets Vietnamese Soul
After years in the restaurant business, brothers Khanh and Giang Ta have turned their passion for baking into reality. Inspired by Khanh’s experience at Copenhagen’s famed Hart Bakery, Paté blends French craftsmanship with Vietnamese creativity. The menu includes banh mi baguettes, shokupan shortbread, croissants, brioche buns, and congee rice porridge for breakfast. Khanh’s favorite, the shokupan milk bread, is described as “simple, yet perfect” and can be enjoyed plain, as a sandwich, or as French toast.

The autumn lineup focuses on caramel, chocolate, and pumpkin cream flavors that bring warmth to the season.

Hidden in Vinohrady, Mūza Café offers a thoughtful approach to inclusive dining. Founders Dominik and Ulrika, who both have food intolerances, created a café that proves dietary limits don’t mean sacrificing flavor. The menu includes vegan, gluten-free, lactose-free, and pescatarian options made from organic ingredients. Bright brunch plates, creamy vegan lattes, and beautifully crafted pastries make Mūza a welcoming space for everyone.

Furiant – Nostalgic Czech Pop-Up
Every Thursday and Sunday until December, Furiant takes over the former Café Parnas on Smetanovo nábřeží with a pop-up dedicated to Czech childhood favorites. Pastry chef Jiří Matějka reimagines traditional desserts like plum dumplings, kremeš (vanilla custard slice), and semolina porridge, creating a blend of nostalgia and modern flair. The menu celebrates Czech sweetness in its most comforting form.
